I've noticed that the Baker Creek catalog says that many of the beet tops are used for greens. Do any of you use them? I bought two bunches of small beets at the farmers market this morning with beautiful red veined greens still attached and thought it might be worth a try to use them something like cooked spinach. How do you prepare them?

Marty,
You've missed something if you haven't had any steamed beet tops. A dab of butter and salt and pepper to taste and you'll wonder what that red root on the other end is for.

They are yummy, cook and use like Chard, (It is the same species)
Small leaves can be used in salads.

OK, I don't know about the brussels, however, the beet tops are good. Fresh in salads when young, even use your thinned ones (whole) from your garden too. I usually stir-fry the older ones. But I am assuming you got this at a local organic place. . .if not the tops will have the most pesticide residue.
