How do I make home made pure garlic paste that will last and not turn color? Is there any good way to do it?

I got a garlic roaster for Christmas and it couldn't be easier to make paste. Cut off the top of the bulb removing a 1/4" of cloves, exposing the ends of the cloves. First remove most of the skins. It calls for a tablespoon of EVOO in a small pan shaped cup. Lay the bulb cut side down in the oil and turn it on. After 27 minutes? it is done. You can do it in the oven, too. Try googling roasting garlic and you should find a bunch of info. It came out awesome. Spread on sourdough french bread. YUMMMMMM:D

Thanks hon, that sure sounds yummy. But actually I meant raw garlic for using in asian cuisine and other cusines that call for garlic paste along with ginger paste. Once I grounded garlic with olive oil and a tad of salt, a month later it turned dark brown:eek:

If you cover your paste with a thin layer of olive oil to prevent oxygen from touching the garlic, you probably won't have discoloration. That is what I do with my pesto, keeps it from browning.

I would only make enuf for one week at a time and use it quickly- garlic and oil (unless heat pasteurized) will get yucky and you can't taste it.. Botulism. If you put some kind of preservative in it (salt, or vinegar or other chemical preservatives) then it could last longer.
just google this storing garlic in oil and it will tell you the dangers and how to do it without poisoning yourself. I would hate for you to get sick, and garlic/oil can really get you.
EDIT: I had more time to find a good article on botulism and garlic-- I really find this to be a danger for folks who want to make and store it. so I looked up and found one that is easy to read and understand--lol some of the sites are so technical that it is too hard to read.
Now if it is ease of use that makes you want to make a lot to have on hand-- make it and freeze just the paste in small ice cube trays and then you can just pop one or two out when you need them.

Oh okay, then how about taking a few cloves, remove the skins, lay them on a cutting board and lay your cleaver on top of them flat and smack the cleaver with the palm of your hand=instead fresh garlic paste. Can't help with storing it, but to add to a recipe, you shouldn't need to store it. or, did I miss something?

I dunno anything about making such a paste unless
I accidentally run it over with a truck but I do know
that if you brush that pasts all over your front yard
where those dogs keep pooing that they won't
consider your yard worth visiting anymore.
A side benefit is that neither will the vampires!
