View Full Version : recipe wanted please: Canning Pears

For the last several years, my dad has been slowly trying to reclaim what looks to be an extremely old fruit orchard that was left to go wild long before they bought the property. I looks like he has won over the pears at least and has a nice crop. Does any one know a good recipe for water bath canning them? or maybe pear jelly or butter recipes? If I dehydrate some as well to use in winter cookies, should I mist the chunks with lemon juice or something?

I don't know about dehydrating pears? You will have to wait for someone else to help you with that..
But here's a link to an earlier thread on the use of pears...
The two recipes I offered were from my English Grandmother's repertoire..She was quite the pear and marrow preserver....Always with the addition of Candied Ginger!!

What kind of pears are they?
We have a huge "canning" pear tree in our front yard. They aren't much to pick up and eat off the ground, but my wife made some great butter, jams, and preserves out of them.
I'll try to get her recipe.

yes please on the recipes. :) Daddy wishes he knew what kind of pears they are. they are sweet and nice, but since it looks to be a really old orchard allowed to go wild for heaven only knows how many years ago, he has no clue. Would a picture of the fruit and tree help maybe for someone to give a shot to telling us?

Ok, so I used the chart from the canningusa.com for the processing times but rather than using even a light syrup (since my mum is diabetic) we used apple juice that I mulled with pumpkin pie spice, cloves and cardamon (sp?). Oh did that come out amazing. Only one didn't pop so we got into that one to sample it. We had to stop my Dad from drinking the juice straight LOL. Mum is now trying to find a way to get to the top of the pear tree and grab the very last of the harvest cause we originally intended on giving the pears as gifts at Yule and now she doesn't want to share unless we get more LOL :^)

Do you have a fruit picker (don't know the right name...) They are on the end of a pole and act like a hand with the fingers curled in to pluck the fruit and drop it into a small basket. I have seen them in farm stores... Of course they will only reach so far, how tall are the pear trees?

unfortunately tall enough that my 5' nephew standing on top of the van couldnt get to the top. Will have to check farm and fleet to see if they have one of those pickers.

our local health food shop up here makes their own dehyrated pears and other fruits and they are delishious for a quick snack.

werecat, this year i read about using apple juice also for canning the pears. it works great! i'm gonna try adding the spices you mentioned next year!
i always dehydrate a bunch of pears very year. i core them and slice them thin and then put in dehydrator. they come out great. i use nothing to prevent them from discoloring and they just turn a nice very light tan color. i spose one could use the spices werecat mentioned on them before drying to make them a bit tastier!
