My mother-in-law loves tomatoes, but the acid in the fruit (vegetable, whatever ... that's an argument for a different thread) gives her canker sores. She is certain that she had obtained a RED (not orange or yellow), non-acid tomato from an Amish greenhouse in the past. She cannot remember the tomato's name.
It has to be a RED tomato, no oranges, yellowes, etc.
Any suggestions?

Has she tried Beefsteak? According to Garden Seed INventory, it has a "subacid" flavor.
Unfortunately, acidity seems to be linked to the tomato's color. That is why most of the low-acid tomatoes tend to be lighter in color. Conversely, darker tomatoes (i.e., purples) tend to be even higher in acid. There must be exceptions to this general rule of course. And certainly there must be one red that is lower than all others. Anyone else know more about this?

I find Stupice, an open-pollinated, smallish tomato, to be completely sweet.

All tomatoes have about the same amout of acidity. It is the higher sugar content of lighter colored tomaotes that hide the acid flavor.
I have a tomato called MO Pink Love apple. It is fairly sweet. I obtained the seeds though Seed Savers Exchange. Though I do not have enough to offer everyone this year,
I'd be willing to send you some to give to your mother/
