how do you make it With cream corn , does any body make it with peppers ,I put Honey in mine .

i dont know what my grandma uses, but its amazing. i believe she puts canned corn of some kind in it and i think she uses honey too. mmm. i think i need some chili and corn bread now

We use to add sausage and canned corn ( already cooked together ) to the corn bread mix and then bake. It was scrumptious.

Jiffy corn bread mix. But if I'm able to make it so it is just for me (like corn muffins) I load them with sliced jalepeno peppers! Yum!

I like a shot of honey in mine too- Now for the kids, the honey and sliced up hot dogs and then a drizzle of melted butter on top and bake up in muffin tins and you got easy to eat corn dogs with less fat than the deep fried ones (even with the drizzle of butter on top) that small drizzle of butter gives it the "deep fried" taste with out deep frying them. They also like a bit of sharp cheddar on top too!
Arg! We should be putting this down in the food thread!(smacks self on forehead):eek:

It has to get cooked in a cast iron skillet too....oh that makes the BEST cornbread ever. I think how you cook it is just as important as what you put in there.

I make mine in the slow cooker. Got the recipe from the first Fix it and Forget it (http://www.fix-itandforget-it.com/fix-it_and_forget-it_cookbook.php) book. It gets a nice brown crust around the edges. Takes @2hr 30min. I love it as I can make it while puttering around cleaning, running to the laundromat, etc. I do play around with added ingredients. Dehydrated bell peppers, lots of chives, fresh cracked pepper, granulated honey instead of sugar, etc.
On my lunch break at work right now, but I can post it later when I get home.

One way, I use reg. Corn meal and Honey..I also use a cast iron skillet to bake it ,(passed on to me from my mother in law)
In summer I like to cut corn off the cob and use fresh corn with honey...bake in CIS

here's the recipe as written:
Corn Bread From Scratch
Dorothy M. Van Deest
Memphis, TN
Makes 6 servings
1 1/4 cups flour
3/4 cup yellow cornmeal
1/4 cup sugar
4 1/2 tsp. baking powder
1 tsp. salt
1 egg, slightly beaten
1 cup milk
1/3 cup melted butter, or oil
1. In mixing bowl sift together flupr, cornmeal, sugar, baking powder, and salt. Make a well in the center.
2. Pour egg, milk and butter into well. Mix into the dry mixture until just moistened.
3. Pour mixture into a greased 2-quart mold. Cover with a plate. Place on a trivet or rack in the bottom of a slow cooker.
4. Cover. Cook on High 2-3 hours.
How I make it:
I have a large 6 or 7 quart oval slow cooker and a standard loaf pan fits perfectly. Since I don't have a rack for my slow cooker, I place wadded up tin foil balls in the bottom of the slow cooker and place the loaf pan on tom of that. I do not cover the pan.
My pan is just a basic aluminum loaf pan. I sem to get a nicer brown crust if I grease the pan with margerine, use whole milk and vegetable oil instead of melted butter.
If I turn the slow cooker on high with the lid on to pre-heat before I start mixing the ingredients, it is usually done in 2 hours & 15 minutes.
Granted, it isn't as good as using an iron skillet, but it is quite tasty and care free to make.

I've been told I make good jalepeno corn bread. I just use self rising corn meal mix, buttermilk, cream corn, a couple of eggs, cheddar cheese and diced jalepenos.
We ate the best corn bread I have ever tasted in Memphis a couple of weeks ago. It was at the Cupboard.

My grandma taught me how to make cornbread. We lost her in 2005, 6 days after her 99th birthday.
I posted her recipe, the way she taught me to make it, over at the recipe board.

My grandma (born and raised in OK, spent her adulthood in CA, then moved to TX with her second husband) used to make cornbread all the time! I loved it. She'd make it with canned cream corn and she'd put peppers in half for my grandpa, then put toothpicks down the center so we'd know which side I should eat from. LOL
Some of the peppers' heat always crossed the line and those were my favorite parts. Just a touch of heat, that good Texas Cuisine flavor, and not too hot for a little kid's taste buds.

No box mix! Cornbread is too easy; one of the few recipes I know off the top of my head. I love it with canned or grilled green chiles and sharp cheddar. MUST be baked in a hot cast iron skillet with bacon grease. YUM! Now I'm hungry.

If you want a nice variation of
cornbread then the addition
of chopped fresh Jalapenos
is the thing for you.
Just wear kitchen gloves and
remove the ribs and seed.
This takes most of the heat
out of the bread yet leaves
an unforgettable flavor.
The usual ratio of white
flour to cornmeal works
for me.
I have a recipe I use and am
happy to share it but I bet
Louanne and other's can top
it easily.

Ajla- never tasted cornbread??? oh my, you're in for a treat. Go to off topics- at the top is a recipie thread- go to that- then go to search, and type in cornbread. For your first try, I'd use a simple recipie, with just the addition of maybe canned corn, and green chili or halapeno if you like the flavor. Otherwise, just start with basic cornbread, and you'll be hooked. Thousands of different additions can be added to the basic mix...

Don't expect anything grand.
It's gorilla corn bread after all.
Flour Cups 1.5
Cornmeal Cups 0.5
Sugar Tbls 4
Baking Soda Tbls 4
Salt 1
Milk 1.5
Eggs 2 2
Vegi Oil 0.25 cup
Jalopena
Jalapeno should be diced as large or small as you like.
This recipe will fill two 6 inch pizza hut personal pans
or one 11 inch cast iron skillet.
You know more about temps and howhigh and how long than I do.
This makes a really nice corn bread that I make very often.
You should adjust this recipe to suit your needs.
Bearing in mind that I am not a baker.
That's why I've been hunting LouAnnes house so I
could steal a focaccia or pie from her window sill.

I'm a retired chef and I've seen many serious arguments over how to prepare corn bread.
Add sugar/honey or not.
Hard crust and grainy like my Mom or soft like cake.
Jalapeņos, cheese, or creamed corn--or not.
Low heat or high heat.
Butter in the mix or just on top.
Baking powder or not.
Square cake pan or cast iron skillet.
Crisco or lard.
Crumbled bacon/sausage or not.
That said, I think one of the finest meals is a mess of greens and cowpeas with pepper sauce (vinegar with hot peppers) and a slice of corn bread to sop up the juice.

Skillet baked corn bread, fried green maters, and soup beans (that's pinto beans to you Yankees)....now that's good eatin! A mess of greens on the side...well that's heaven!

I have made cornbread with masa (tortilla flour), Ajla. Masa is a much finer corn meal than what corn bread is traditionally made with. The flavor is right, but the texture is not--more like cake than like bread. True corn bread has a somewhat coarse texture. Masa requires much more liquid than corn meal. The polenta is coarser than corn meal, more gritty. Again the flavor is right, but not the texture. I wonder, if you whirled some polenta in a blender, if it would become more like corn meal?
The skillet is a cast iron frying pan. You can make corn bread in a baking pan, but the edges don't become as crisp as they do in a skillet.

Yeah, give the polenta a spin in the blender or food processor...pulse it, don't let it go for a long time or you'll end up with more masa. Corn meal is between the two...

If the flour you have is unsuitable for the traditional cornbread recipe I have, that's okay.
Let's try a different approach.
Make the batter, same as usual.
Fry the bread, much like flapjacks/pancakes.
Let's see how that goes.

My grandma's recipe, and the way I make it, is using Jiffy mix, doubling the egg and adding a strained can of corn. Grease up a pan in crisco and yum yum yum. I could eat the whole thing. My absolute favorite way to eat it is with a slathering of apple butter. So good! I'm practically drooling right now thinking about it.
