View Full Version : What to do with field corn?

I just realized that two of my corn varieties are of the "field" type. What does one do with field corn?

I don't have cows or pigs or any livestock around.

Any ideas?

You use corn meal? Most corns make good meal.

It is good to eat if you get it the day it gets right. Pick some early and keep trying it until it is too late. Not as good as Kandy corn or GS90, but I have ate a lot of it.

Same here. My uncle had a farm in Southern Iowa, where we visited almost every summer when I was growing up. He was really good about knowing when to pick field corn at just the right time for good "roastin' ears". Of course, some years we were a few weeks later in the summer and that stuff could be tough.

You can cut it from the cob when in the soft, milk stage and mix the kernels, either whole or mushed up ("creamed" almost) into batter for cornbread, corn fritters, hush puppies, corn puddings, etc. That works pretty well.

yep! fresh eatin milk stage, ground for corn bread, hard corn boiled several hours with enough salt for flavor and any other spices ya might take a hankerin to, makes it quite edible. Or figure out how to make parched corn. I think that was soaking in salt water for awile and then roasting. But when we tried it it came out bit hard, probably didn't do it quite right.

It makes good sweet corn if picked early enough. To be honest I like it better as I prefer the cornier taste rather than the sweeter blander taste of modern super sweet corn. It will need to be picked early so keep an eye on it.
you can allso make Hominny , corn meal & fryed chicken , but will need to run it through a chicken first to get fryed chicken :cool:

We actually like it better than sweet corn.

We now live in East Texas but we lived in Mexico for 4 years. The way they ate field corn was to boil it, lightly spread mayo on it, sprinkle it w/parmesan cheese and then sprinkle paprika or chili powder on it. The last step was to drizzle some lime juice on it. Sometimes instead of the mayo they'd put butter on it. I know it sounds disgusting, but it was really quite tasty!

A fellow in N.Georgia told me to take a 5gal bucket with ice and water in it, to the field(Small garden).Pop the corn off and throw it in the bucket.
Be Jibbers, thought he was Nutz.
Years later I found out that corn, any type, begins to convert to starch as soon as it seperates from the stalk.The ice water slows/ stops the process!

To my way of figurin' you've got a good passel of corn to make vinegar with! And anybody that cans or makes slaw and such uses vinegar. Make it just like you do cider.

And, If I had a bunch of feild corn, I would go buy me a couple of large metal trash cans and wait until the corn was good and dry. Then I'd shell that there corn and store it up like Joseph did because surely, the way the world is a goin' it ain't gonna get better no time soon!

Then, I'd go get me a good solid grain grinder and make sure I had it put back for when I needed to make me some homemade corn bread.

Oh, and you cain't get no better than fish doused in egg and meal and fried up to a pretty golden brown and a dish of hush puppies sitten long aside it with a nice puddle of homemade catsup!

Oh my, but I think I'll be droolin' if I keep this up so I better hesh up.

ya make alcohol first, just like the first stage of makin moonshine, (meal, sugar and yeast with water in a barrol with a vapor lock) and then leave it sit too long till the 'mother' turns it into vinigar, by then a thick scum of mold grows on top. That's old fashoned method.

I prefer eatin mine fresh, or fresh cooked cornbread.

You can make vinegar out of grape juice, apples, corn and a couple of other high sugar content fruits/veggies.

Whoa there Quilt, got to get city 'Folk used to makin Moon. (You know more than Me).

Cider/vineger comes from ANY, overfermented brew., especially as Quilt said " got to have a vapor lock", to keep this down.

It's different from distilled spirits, 180 proof, "careful when you cut it, or you'll get Blue Water!

Don't let all that field corn go to waste, or we will be going to the store by candle light.

I used to slather corn with butter and salt, but these days I like it grilled or steamed and just eat it plain. I have learned to appreciate the actual taste of the corn. That is one thing I like about Marai hybrid corn, it is sweet but has a real corn flavor s well.
