Hot produce makes them more juicy.
1. slink into garden with knife, salt, pepper, lemon pepper, paper towels
2. hastily eat as much as you can in the garden, while filling backpack
3. saunter out, making sure to wipe your chin and hands first

Just for you red my all time favorite pico de gallo recipe.....awesome on fajitas!!
5 medium tomatoes
1 onion (I like the red ones)
couple handfuls cilantro, get the big stems off but the little ones are ok
4 serrano peppers (or more!!)
1 garlic clove
Dice up tomatoes, onion, peppers, and garlic. Chop the cilantro finely and mix with the veggies. Add a squirt of lemon and a pinch of salt and mix well. This keeps in the fridge a couple of days.

2 Tomatoes, washed and diced
2 Slicing Cukes, washed and diced
1 Medium Diced Onion or 4-5 Chopped Green Onions
Salt & Pepper, to taste
Your favorite vinegar based salad dressing

Mix All ingredients
Chill 1 hour
Serve

Simple, delicious and the stove never had to be fired up!

This isnt my favorite or anything but it does highlight the maters.....

For this you need a huge maters, like a hillbilly I think they are.

You make tuna salad, the kind with mayonaise, although you might want to skip celery, i guess, and cut out the stem of the tomatoe, then slice it so it has four still connected sections. fill it with the tuna salad, and I know it sounds eird but they melt together in a great taste. I was suprised, But I would try this without a big old garden tomatoe, the ones in the store that look alot like tomatoes without any taste would probably be terrible like this...

I have two things I look forward to every season when tomatoes start coming in numbers. The first EVERY season, when I get 1 1/2 lbs ripe tomatoes, is pasta with raw tomato sauce, which is so simple that it can be fixed while the water is boiling, then the pasta cooking. It is just [b]1 1/2 lbs tomatoes, cut into 3/8" dice, 4 cloves minced garlic (hopefully just harvested!), a large handful of fresh basil leaves, chopped, 4 tb very good extra virgin olive oil, and 1/2 tsp each salt and freshly ground black pepper, mixed together in a large bowl[/i]. After the 1 lb of pasta is drained, dump in with the tomatoes, mix well, and serve. I make variations on this throughout the summer, adding kalamata olives, anchovies, capers, and a number of other ingredients, but I always start with the simplest one. Absolutely delicious!

The second one I look forward to is gazpacho, which I need at least 3 lbs for. One of my favorite variations on this is green gazpacho, with green zebras, poblanos, and cilantro, giving it a Mexican kick.

I told a friend to be careful around my garden...he'll never know where hot oil has been sprayed, or what kind of pepper I made it from!
