Mook,

I love this recipe!! It is my gold standard for cobblers.

My recipe calls for regular flour and 2 tsp. baking powder and dash of salt.

Most times I now add a teaspoon or 2 of vanilla, and with peaches I add a tsp of cinnamon.

Thanks for the recipe;my mother's is just to much and this seems like it is a bit easier. Can't wait until we make it and add some vanilla beans ice cream to it; possibly a new family staple.

Once you try it, you'll love it.

I started using this basic recipe about 20 yrs ago. Everyone loves it. It is as popular now as then.

I usu. use more than a cup of fruit. I make sure the pan is full of fruit. Prolly closer to a qt. I use all types of berries, strawberries is our fav., peaches are also awesome, blueberries, blackberries.

If I wanted a quick dessert but didn't have fresh fruit, I've used a can of peaches to make the cobbler.

If I am short on milk, I use the juice of the fruit added to whatever milk I did have.

Can I have mine warm with vanilla ice cream melting over the top? That looks wonderful.

Pretty much the same as I use...mine calls for a bit more flour (1 1/2 C and a quart of fruit...). I did one last night, with raspberries(fresh) and peaches(last year's canned)...

I usually do peaches, but have done raspberries, blackberries, blueberries, by themselves or mixed, peach with all the above, singly or mixed, cherry and would probably try apricots, if I had enough of them.

I made this for family that was visiting from out of town and it is so good, so easy and did I mention so good? I used blueberries but am planning to try peaches, apricots and blackberries. Just what I needed, a really quick really good dessert, oh well guess I'll just have to get out in the garden and work it off. Did I mention using mostly cream with a little milk?

DesertRat,

I'm glad you liked it. I have used this recipe when folks have dropped by and stayed for dinner. In the winter (before putting up my own), I'd just open 2 cans of peaches for the fruit. Lots of times, I've just used the juice from the fruit in the batter instead of milk.

I made the blueberry version last night. I added vanilla and cinnamon to the batter. It was very good, but the husband still prefers the strawberry.

Michelle, I didn't think about adding the cinnamon and vanilla but will next time and it sounds like this would be good with any fruit, I have apricots I was going to make into jam but may try this instead. Thanks

I also use frozen fruit in the winter. Just thaw the majority of the way.
Like I said before, this is our favorite dessert.

I'm going to take it, and adapt it to make in a dutch oven.

I used all purpous flour and 2 tsp. baking powder and it turned out great. Blurberries are on sale again for $1 a pint so I'm going to stock up and freeze some. I may try it in a deep dish type thing next.

I don't have self-rising in the house, so I use all purpose with 2tsp baking powder and dash of salt. You can use self-rising as well.

That looks berry delicious and is just begging for a scoop of good vanilla or cinnamon ice cream.
