This is my Favorite thing to eat!
My problem is...
Im a dummy at how to make them.
I know how, but dont want to share my thoughts, cause I make them just too dang Hot for you folks.
Anybody else Crazy for Hot wings?

Ya ever boil them in Sprimp Boil first?....Then Grill em?
Give your Ideas, carefully please...
This thread should make us hungry for Football season soon, right?

I coat the wings in corn starch, then deep fry them for a few minutes, until golden.

For sauce, half a stick of butter (yes, real butter), melted, with at least a cup of Frank's Red Hot hot sauce, then I coat them with some sauce, spread them out on a cookie sheet and bake them for another five to ten minutes. They are ready when the sauce is dry. Then they get a second dip in the sauce and served with a side of celery and Bleu Cheese Dressing (or ranch). Sauce can be varied with extra peppers...ground cayenne adds a nice kick...powdered habanero takes them to 'make your lips bleed'.

I usually make up several levels of 'heat'...from a totaly mild BBQ to at least the cayenne.

My wife started cooking them for me on her Big Green Egg and it has raised my level of wings greatly!
I like all types of wings.

Though I am a "Grill Guy", I still prefer deep fried wings. I make some killer wings, but don't do it often because the mess and expense of deep frying.

The two best places in the country for wings are the Anchor Bar in Buffalo -- where they were invented -- and a little dive called The Oriole just outside Cleveland. There may be equals to those two, but I sure haven't found them, and it hasn't been because of lack of effort.

Blane there is no such thing as a wing that is too hot!!! I'm the idiot rolling mine around in red pepper to give it some kick when we go out to eat :). You aren't joking about football I was just whining to Redneckplanter that I've been ready for football for about three months now. Back to wings....the best thing I've found for wings is to coat them in your batter and then leave them on a cookie sheet in the fridge overnight. It lets the batter get kinda tacky and it sticks good when you fry them. Lots of butter is a must I use 1/2 cup butter and 3/4 cup Louisianna brand hot sauce dang I hope I spelled that right. Then the whole thing gets a dusting of the Montreal Spicy steak blend for a little extra kick and out come the napkins and elbows!!

While we all enjoy the deep fried wings (not the breaded ones either;)) due to hubby's diet changes we don't do much deep frying anymore- only on special occasions, then we deep fry absolutely everything!:D But I digress, I put a nice sprinkle of "Old Bay Seasoning" or "Emeril's Essence (any flavor)" on them and then grill them low and slow until they get nice and crispy but not burned and then I use almost the same sauce as MJC- butter and Frank's Red Hot- we will sometimes use the Sriracha(their spelling) hot sauce and butter, but one of my new favorite hot sauce is "Gator Sauce"- so yummy and it makes some of the best wings ever!
__We are chili heads here at our house!:D At this moment there are over 12 different kinds of hot sauce in the fridge and about 3 bottles not even opened in the pantry!
__But I have a new kind of wing that we enjoy almost as much as chicken wings--- Turkey Wings!! Whoo hoo on the grill and then given the hot sauce treatment- it just doesn't get any better than that!-But our store doesn't always have the nice ones in, they are a bit smaller than the great big ones and lately they have only been getting in wings that must have come from prehistoric turkeys-:eek: they are so big that they don't even eat well! Well I do have one butcher that will order them in at the smaller size for me but that costs a bit more- so back to special occasions again!:(

About that sauce though...the Franks...That aint gettin it for me, are you using this for a base?
It has a Way Too much vinegar taste for me.
Kinda store bought, ya know?
And almost no heat too.

It depends. I do when I’m by myself but sometimes when my navigator is in the truck with me we take 13 because H is too “bumpy.” <Grin>

I live 3 miles North of Pleasant Hope by the Providence Baptist Church off of H Hwy.

Don't know when you went that way last, but your navigator is right. They're working on H, hopefully with designs toward repaving, because the patching they're doing is rough.

wing stop?? is that the national one. the one back home makes you sign a waiver before you buy the atomic ones. i think that's what they were. anyway, they got sued cause someone had a heart attack due to how hot they were or that's the story i got from the cashier. crazy but the wings are good. my mom has a habanero hot sauce recipe i'll get it from here when she gets off work tonight it is great on wings blane. i get a couple of jars when i go home to see her.

no deep frying is involved

deep side bread pans

Honey , BBQ Sauce & Franks in one

Honey & Franks & Cayenne powderded Chili in another

Honey and powdered Mustard & Franks in a third * ( add jerk spice to this one for a new kick )

bake them till they are falling apart

recoat with the goo , carefully BROIL till burnt but don't burn down the kitchen !

Yes blane it can. There's a little shop in Fredericksburg, Tx that sells all kinds of homemade hot sauces and things like that. One of them actually has a warning label on it that it can remove grease stains from concrete. Wow!!! I had to buy a bottle it was the best hot sauce ever. Seriously a couple of shakes in the giant pot of chili was enough to make me drool it was so hot. I'll see if I can find it for you I think they sell it online now.

Alright,

Here is my top secret Wing recipe. SHHH! Don't share with anyone:p!

Rinse wings in water. While they are still wet, Rub with a flavor of Ms. Dash spice. Add some salt and pepper, and grill until done. Have a little Ranch, or blue cheese for dipping, YUMMY! If you have time to add a step, marinade in COCA-COLA.

Very easy and tasty, I assure you!

I've had some that were too hot for me ... and "I eat raw Habenerros' for Breakfast™"

There are hot sauces on the market where they condense the capsaisan ( sp ) to like 100 times normal , so like it's hotter than Police spray , and they sell it as Hot Sauce :eek:

Daves' Insanity XXXX is pretty much tire cleaner or Paint stripper ... no flavor at all , well , how could you know with the top layer of your tongue laying on the floor in a blob ... ???

typically if you go to a wing place they will have Cayenne chili Powder to add to their Hot Wing Sauce ... If you need anything beyond that bring your own bottle of Habenerro or whatever gives you timber. :D

space this is the hot sauce we use in my house. now that i don't live in tx the family has to send it to me when they go down there. i love the hot stuff like when it's so hot you get the drool going, that's how you know it's some good stuff!!

Not so sure about the colon cancer.
They are proven to help with heart disease, though.
Mexican men have a low rate of heart disease.

It is great stuff!! A couple of drops is all you need or you will be blowing....you know :). When I was in nursing school we had a guy come in when I was on floor rotation that had a heart attack at one of the cook off things and the cardiologist was telling us then about how foods can affect the heart especially if you have certain conditions. So that is how I know about it. A normal person though it is good for you. Everything in moderation right......unless it is chocolate!!

I once made a red chili chocolate cake. A Mexican friend found it very odd that I had put chili in a chocolate cake, he wanted to try it. He thought it tasted pretty good. However, the next day he told me that it threw his system out of whack so much that the gas he passed on the drive home took the paint off the center line of the freeway.

There's a really great small restaurant in St. Louis (Iron Barley) that has a peanut butter pie laced with cayenne. It is the most delightful dessert I've ever eaten in a restaurant.

I love Hot Wings. In fact, while I was pregnant with my first child, I craved them so bad that I made my husband take me to Hooters (while HUGELY pregnant) to get wings. I don't think I was their typical customer!!! Funny thing though, my four year old loves hot stuff - salsa, curries, etc. I think it is because that's what he enjoyed with me for 10 months! My personal favorite hot sauce is one out of Louisiana called "Scorned Woman". It is good and hot, but with a nice flavor to it to balance the heat. A great little story comes along with it as well. Hmm, haven't ordered any in a bit.....

Population studies in areas that live on hot foods show very little colon cancer, or problems with their digestive tracts at all. And it definitely helps against parasites in some of these regions, as well.

I just did hot wings the other day on the bbq. I had never done them this way before and they came out great.
I rolled them in seasoned flour (paprika,salt,pepper,cumin,cayenne). Then I rolled them in hot sauce (your pick) and then another quick roll in the flour mixture.
Medium heat on the bbq and cook til done. You can add a dipping sauce for those who like a little more heat.

Just another way to try if you like.

Im seeing this more and more now pepperhead.

Many days of the week, I work long hours, and just dont have time to prep some wings.
Im on a different diet now, due to my type 2 Diabetes
So, sometimes I just grab a box, from the Kroger...(yeesh, I hate to admit this):eek:
Of T.G.I. Fridays buffalo wings in the frozen isle. There. I admitted it, yes Im a wing junkie, this is bad, no?

Just this brand though...nothing else!
If anyone has tasted these, dont be ashamed, comon....
This is the flavour that I want to learn how to copy.
They have that just right smokey, salty zing to them, but of course (I had alittle of my sauce, to make em hotter)
Now this is just a fix, like I said...for when Im running behind, and just Need to have some Wings.

If anybody knows how to get this taste, and has tried them...Please let me know.
So many ideas out there, keep em coming...Blane;)

The wings are harvested in early spring, before they drop. They'll start growing back around the middle of August or so...and you have to look closely, they are often hidden in the thick hair on the head and neck. You can often spot them first on younger animals...

Blane...Buffalo wings originated up here in the Northeast from New York.
You can get some fine recipes by googling "buffalo wing new york"
There is several recipes of course, but the most common was the chicken wings that are deep fried
(can be baked, broiled or grilled) and then coated with a cayenne pepper hot sauce and melted butter is the main base.
Other seaonings and spices added of course can be found in these recipes.

You Southeners or Westeners can add your own zest
from what your style is for taste :)

Look through the site. They have an online store, and recipes, but the wing recipe uses their brand of sauce, which you can buy in several different sizes. :D

This is my base recipe and then I jack with it from there depending on my mood. Sometimes we do a BBQ honey mix and then sometimes it is the butt blaster hot sauce if i'm ticked off at someone. I've noticed I like really hot stuff when I'm in a bad mood. Any of you do that or is that a female thing?

dh and I both love hot wings. We do 2 kinds. One, deep fry wings, no batter, then put in oven with sauce, ( Franks hot sauce, butter) and cover with foil. The other, (I'm not supposed to have fried food), we just put wings in pan, cover with sauce and bake.

However, Im not a big fan of all the breaded stuff on my wings.

Then a different method without the flour would be to combine the spices and roll the wings.Place on a rack over a pan. Broil on low and turn once after 15 minutes. Continue another 10 minutes and then brush your sauce on and return to the broiler to finish.
My broiler on low was a lot like a high setting for some so I moved the rack farther away then I would otherwise.

I found this recipe several years ago on FoodTV it's hot but the sweet from the brown sugar tames it alot. I love cooking on the grill, so this worked perfectly.

Wing Zzzingers
Recipe courtesy Steve Vandegrift
Show: Calling All CooksEpisode: Mystery Meatloaf/Wing Zappers
Ingredients
Sauce:
2 cups Red Hot hot sauce
2 cups brown sugar
2 tablespoons vinegar (Steve uses white vinegar with jalepeno peppers, onions, etc.)
Stick of butter
Combine ingredients and warm on stove or in microwave, then put in spray bottle and set aside.
Seasonings:
1/4 cup black pepper
1/4 cup garlic, minced
1/2 cup Italian seasoning
1/4 cup chili powder
1/4 cup paprika
1/4 cup dried rosemary
2 tablespoons of red pepper (more or less to taste)
Directions
The above should be enough for 7 or 8 pounds of wings. Rinse and drain 7 to 8 pounds wings. Pour some of the Red Hot hot sauce over them, and toss. Add seasoning mixture (above) until generously coated. You will lose some in the cooking, so don't skimp! Place the wings on a gas grill (or smoker) and slow cook them at a low temperature. After 20 minutes baste/mist with sprayer at least every 10 minutes. Flip them after you mist them. Total cooking time should be around 1 1/2 to 3 hours, depending on the heat of the grill. They're done when they break at the joint or you can break the wing tip off.

Frickers in Findlay Oh, is the best out of all those chains I have eaten at, been to almost all of them.

Drovers is a great place for wings, used to date a girl from st. clairsville ohio and we would slip over there for a couple dozen of the wings in the "hurt me" sauce.

My favorite way to do wings prep them the day before, split trim etc, and toss them in Seasoned flour, and let them rest for 10 minutes in the flour before shaqking the excess off. Them put them on a tray, casserole dish etc and cover till the next day.

2 cups flour
2 T generic cajun seasoning
1 T garlic powder
1 T onion powder
1 T thyme
1 T cayenne
1 T smoked paprika
2 t chili powder
1 t cumin
salt
pepper


The basr of the wing sauce is always 1/3 butter 1/3 honey 1/3 hot sauce.
Then lots of fresh chili peppers, garlic, fresh onion. simmer for 30 minutes and hit with the immersion blender until smooth. Toss and enjoy.
