View Full Version : Fried zucchini straight from your garden

Yummy. Simple, no biggie to this.

Slice Zuke at an angle, heat pan with salted butter not oil or no additional salt added. Fry on medium until the sides are golden brown, then turn over to next side, sice or grate cheese of your choice and pour over the zukes in the pan

yummyyyyyyyyyyyyyy, you can fry up two eggs to go with it for bfast. Yummy

p.s. fresh zuke straight from your garden does not need dressing up with pepper and or salt, it is just delicioius naturally so.

I love fried zuke. Sometimes serve it as appetizer with horseradish sauce.

My fav zuke recipe other than bread is made on the grill.

Make an aluminum foil "packet" cut up cukes in circle, add some chopped onions, oregano, and a dollop or two of butter and throw it on the grill. Cook til tender.

I didn't plant any zucchini. I didn't think I had enough space :(

I like to marinade it and grill it. Marinade: redwine or balsalmic vinegar, olive oil, fresh garlic, salt, pepper, basil (or your fav spice that would go w/ the above ingredients). Hubby likes to add either Worcestershire or soy sauce.

I cut it long ways then round it (so it's like 1/2 rounds), and use a wire mesh grill topper thingy that keeps it from falling through the grill. :D

Often add yellow crookneck squash w/ it.

I like to cook it in a pan with some water or soup broth and mushrooms until it's very soft, then add cheese and butter so it melts into the liquid. Cream works too. This also works for squash.

Sounds like my dinner the other night. I did as you did above but added yellow and patty pan, along with a swai(iridescent shark) fillet. Tossed it on the grill(indirect heat) for about 15 minutes. Open and add a small drizzle of lemon.
Yum!

Ok, another zuke recipe for the home gardener nothing fancy, bacon in pan, slice zukes pretty thick at an angle i think they cook better and not so soggy, and let the bacon fry and do its thang, it will then flavor the zuke so lovely and again, you dont need salt of pepper just bacon yummy yummy.

I did some the other night. I sliced them, dipped in egg wash, then dipped in mixture of 1/2 biscuit mix and 1/2 parmesan cheese, then fried in olive oil. oh my!!
It was my first meal from the garden, also had first tomatoes and first green beans!

I dip my zuke slices in egg and then in breadcrumbs, fry them up til golden and then melt a little parm or cheddar over them. Ooooooh so tasty. Undoubtedly my favorite way to eat them, although I love zucchini in a hundred other ways too. I can never get enough!

I dont use anything but olive oil to fry the no batter, they are yummy. Last night I pan fried some with onions, garlic and then added bockwurst it tasted really good.

My zucchini are just finger long right now, but in a week or two, I'll have a WHOLE bunch. I always liked cutting the zukes julliene, thinly slicing a red onion, dice a garlic clove or two, and marinate it in spicy italian dressing for a few hours. Oh yeah

I like Drakes Batter Mix (may be a regional product) for fixing zucchini. Dip sliced zucchini in beaten egg then dredge in batter mix and pan fry in some oil. Hubby's favorite veggie made that way.

If that's a problem in future years, you might try growing one in a five-gallon bucket. I've had good luck with mine this way and it doesn't take up much garden space.

Mmmmmm!! I grilled some zucchini and squash last night on the grill. I used a little olive oil, garlic, and some other spices. I skewered them and grilled 'em up. Then I put some parmesan cheese on them. They were So good!
