We always take the smaller potatoes and the ones that were damaged during digging, and can them. We ended up this year with 36 quarts. I like to leave the skin on, and cold pack them.
We use them mainly in soups and stews. But by far my favorite is to drain them, and deep fry them. Nothing better than fried new potatoes. MMMMMMM!:D

we love the small boilies canned, just dump them in a bowl and microwave with butter and herbs, salt & pepper. We used to peel all those little buggers, talk about hand cramps, until we learned they work just fine un-peeled as well. salt potatoes are yummy as well as creamed with fresh peas, probably my favorite. The ones up to golf ball size are normally hot sellers at market.

We rarely deep fry, but I sure would like to. mostly do oven roasts on fries and such but I like fried stuff, my wife is sort a health consious, darn it!

The very best potatoes I've ever had were new potatoes in the Matsu valley Alaska. OMG, boiled them, with some round onions, a little cream- will never forget that valley and it's produce. One day I will live there
