We're at that point in our garden where there's a lot of "firsts" of about everything. The tomatoes are loaded with green tomatoes, the first tomatillos are ripening, the zucchini has a couple nice squash every day or two, and there are a couple of ripe okra pods every day or so. But, there's hardly enough of any one thing to prepare a dish -- even for just the two of us.
A friend of Nancy's passed this idea to her the other day. She cubed a couple of green tomatoes, a couple tomatillos, a zuke, and all the okra that was ready. She sauteed them all in bacon fat until they were just between crisp and tender, then shaved in a little garlic and seasoned with salt and pepper. A few minutes before she took the dish off the stove, she dusted the whole thing with cornmeal, which gave it some of the taste and texture of fried green tomatoes. As Rachel Ray would say, "DE-LISH!"
