View Full Version : Eating pumpkin leaves?

My pumpkin plant is growing beautiful leaves and I was wondering if anyone knows if they are edible/has nice recipes? I found an African recipe online for pumpkin leaves but I'm not sure if it applies only to a certain species or all pumpkins? Also the recipe didn't look very tasty :p

Hi Noob,

I found a recipe in "The compleat squash" book by Amy Goldman, it is not exactly using squash leaves ,but shoots! Apparently you can eat all C. maxima, C. pepo, C Moschata or C.Mixta shoots ,but some of them are more palatable then other. The recipe is very simple, you will need several young squash shoots (around 20 to 25 cm long), a small clove garlic (optional), a small block of butter,some salt, shoyu (optional) & pepper/chili flakes (optional).
Method: Cut the shoots in 2 inches long (or longer), bruised the garlic and chop them up. Heat a pan, add in butter and let them melt, add in garlic let it turn golden brown, add in squash shoots, stir in well, add in shoyu, salt and pepper. Mix them well, turn off heat, ready to serve...bon apetite!

My friend told me to use the squash shoots like spinach and I tried them in curry, delicious !

I have heard of eating pumpkin leaves, but darned if I know anything more about it! Let me know if you hear. There are always so many of them, seems like it would be a good idea.
