I'd swear I just posted this thing a few minutes ago but it ain't in here anyplace I can fine so here it comes again...senior moment I suppose..

A friend sent me this a few days ago, and I have had neither the time nor the pumpkin to try it out..hope you guys enjoy it

Pumpkin Enchiladas

PER SERVING (1 enchilada): 188 calories, 2g fat, 948mg sodium, 31g carbs, 5g fiber, 8g sugars, 10.5g protein

2 medium-large corn tortillas (like Mission Super Size)
3/4 cup enchilada sauce, divided
2/3 cup canned pure pumpkin
1/3 cup chopped onion
1/4 cup shredded fat-free cheddar cheese
1 slice fat-free cheddar cheese, halved
1 1/2 tbsp. taco sauce
1 tsp. dry taco seasoning mix
Optional: salt, black pepper, fat-free sour cream, chopped scallions

Preheat oven to 400°

Bring a pan sprayed with nonstick spray to medium heat on the stove. Add onion and, stirring occasionally, cook until it begins to brown, about 2 minutes. Transfer to a medium bowl.

Add pumpkin, taco sauce, and taco seasoning to the bowl. Mix well. If you like, season to taste with salt and pepper. Set aside.

Spray a small baking dish with nonstick spray and set aside. Warm tortillas slightly in the microwave.

Lay tortillas flat on a clean, dry surface. Spread 2 tbsp. enchilada sauce onto each one. Place a half-slice of cheese in the center of each tortilla. Evenly distribute the pumpkin mixture between the centers of the tortillas.

Wrap tortillas up tightly and place them in the baking dish with the seam sides down. Cover with remaining 1/2 cup enchilada sauce.

Bake in the oven for about 8 minutes, until enchiladas are hot. Carefully remove dish from the oven, and sprinkle enchiladas with shredded cheese.

Return to the oven and bake for another 5 minutes, or until the cheese has melted. Plate those babies and, if you like, top with sour cream and/or scallions. Enjoy!

Thanks Osh, I've had that happen too, posted somthing, hit send and its gone....poof!

Good recipe too, may have to try this one soon.

Sounds good. I might try it this fall, especially if I have a pumpkin harvest.

just wondering if say, zucchini, or some other form of squash I have coming out my ears right now would substitute for the punkin.? What cha think?

Hmmmm, that might be good.
If you try it with that, let us know how it went.

I think it would have to be winter squash, Osh. I think the taste of summer squash would be too bland.

Oh Yea! That sounds gooood. We make a similar dish using sweet potatoes.

I think it would have to be winter squash, Osh. I think the taste of summer squash would be too bland.

you are probably right.....I have been "julienning" if thats a word, a lot of zucchini and drying it...goes good in soups/stews during the winter months...I was thinking about that stuff...

by the way I make salsa by the gallon jug around here...I use it usually where a recipe calls for canned tomatoes...its a weaker, hot as hot version as the chip and dip stuff...if anybody wants the recipe...

Gees Lorna, I didn't know anybody in NM knew what a punkin was....lol...just kidding. I grew up in Albert Turkey as we used to call it...

I'm a transplant, Osh. :) I've been living 25 miles south of Albuquerque for 6-1/2 years. I was a military brat, lived in a few states. I spent most of my adult life in the San Francisco Bay Area.

25 miles south..that's Belen isn't it? Or maybe Los Lunas...been way too long for me to remember ...I know I used to hunt rabbits all over Antelope Springs, uh, fifty years ago that is...lol...

I have an LL address, but do not live in the village. I'm in what is termed "the county", more or less rural area.

Big ol' mountain out a mile or so West from LL, sitting out there all by itself, and right up on top of that mountain is an ancient European settlement that UNM archaeologists have stated pre-dates any appearance including Columbus and Eric on this continent's shore....I've seen a documentary on it, but it never got any press....if I remember it right, they were talking Hebrews...any word on that floating around out there lately?
