I am not a big fan of commercial chili powders. I don't like dried garlic - I'd rather add fresh garlic to my recipes. Does anyone have a chili powder recipe they'd like to share?

You can use ground chilies, cumin, coriander, and if you like a lot of spice, add some cayenne as well. You can drop fresh, peeled cloves of garlic into your simmering chili. Sometimes I use ground chilies as well as red chili flakes.

I agree with you 100%! I hate garlic powder (why else would I have just harvested 120 heads? lol), and I like to add freshly ground cumin to my chili, in different amounts, depending on the recipe.

Pendery's is my favorite source for pure ground chiles (http://www.penderys.com/page33.html). And some of my favorite varieties are Texas Red Dog, Cochise, Chimayo, and Pecos Red. For the dark, roasted type ( I usually use these as about 1/4 of the total) the Rancho, Concho, and Jalisco are favorites.
