Anyone familiar with planting pak choy? I wondered if there was anything special I needed to do to build up my soil.

One of my favorite crops!

The soil needs plenty of humus in it and should be pretty rich in nitrogen. pH just ordinary...not too acid not too alkali. Pak choi is a fast crop, 45 days or so ideally, so succession-planting is recommended. The more so since it is likely to bolt in cold, and certain to bolt in heat; so by making a series of smaller plantings staggered by a week or two you increase your chances of growing some to perfection, as well as having a supply just coming on so long as conditions last. Otherwise it's an easy crop to grow, and it doesn't need to be grown to perfection to be worth picking.

One caution, about seed-saving; don't be tempted to save seed from early bolters. You need to be critical and try to choose parent stock that grew well, nice and big and succulent, and didn't run to seed too soon.

How far apart do you space pak choi? I use raised beds....I have two beds for sure that will be ideal - rich in hummus, but may need a little natural fertilizer.
