Last night I made a big batch of thai fish dumplings.
I put about a tablespoon of filling in wonton wrappers.
Something came up and we didn't have a chance to eat them, so I froze the whole batch on a cookie sheet.
I wanted to fry some up tonight, but I was wondering if I should thaw them first or if I can just toss them in the oil frozen. They will probably keep their shape better if I can do that. But will it be enough to thaw/cook the filling?

You can fry them from frozen no problem. If there is only a tablespoon of filling in each they won't have any issue with being cooked from frozen state. Should take about 4-5 minutes. You can always do a tester or two and make sure they temp out high enough.

Yeah, I'd fry them from the frozen state. That's how most of the commercial stuff you buy is done, like french fries, onion rings, shrimp, etc.

Yes, frozen. They will hold their shape better this way.

Are you deep frying them? If so, I highly recommend frying them only a few at a time as the frozen dumplings will chill the oil somewhat. Let the oil come back up to temp between batches.

Cool! Thanks for the advice all!

By the way, here is what I did-

1 stalk lemon grass (white portion only)
4 cloves garlic
1" piece ginger
1/2 small onion
Handful of Thai Basil
1 Spring each of Vietnamese Corriander and Fresh Mint
Small Handfull of peanuts
2 tsp tumeric
2 tblsp toasted corriander seed (ground)

Combine the above in a food processor. Add a little fish sauce and puree into a smooth paste. Combine the above paste with the cream from the top of a can of coconut milk and cook on low heat until thickened/reduced slightly. Allow to cool. In food processor about 16 oz of cod was purreed, then combined with coconut milk/spice mixture and 1 egg to make a smooth paste. The paste was then stuffed into wontons.

I'll let you know how they come out!

But I love to cook, and eat the day(s) after,---recipes?

Just can't eat after about 10 hrs. preparing.
