INGREDIENTS (Nutrition)
1 recipe pastry for a 9 inch double crust pie
2 large zucchini
2 tablespoons lemon juice
1 pinch salt
1 1/4 cups packed brown sugar
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons cream of tartar
1 pinch ground nutmeg
3 tablespoons all-purpose flour






DIRECTIONS
Peel the zucchini. Cut into quarters lengthwise, then remove seeds and cut crosswise (as you would cut apples for apple pie). Toss together 4 cups chopped zucchini, lemon juice and salt. Place mixture into frying pan and cook until tender-crisp.
In a separate bowl, mix together the brown sugar, cinnamon, cream of tartar, nutmeg and flour. Add the cooked zucchini to sugar mixture and mix well. It will be a little runny, but that's OK.
Place filling into a 9 inch pie crust, dot with butter, and place top crust on. Bake in oven at 400 degrees F (205 degrees C) for 40 minutes or until golden brown.



I have had this and it is sooooooo yummy ... no one know it is not apples ..We had it as a apple tart kinda thing .. I will get the recipe from my friend tho :)

I made this yesterday. It was very good. We even fooled a relative with the "apple pie" and got rid of more zucchini!! Thanks for posting! :)

Would anyone think this can be canned? What a joy this would be in the winter for baked treats! Think I'll research canning this recipe.

you could maby can or freeze the zucchini not sure I don't grow it .......someone will know tho...

Having more zucchini than humanly possible to eat, I did that one year. I took zuc and put it through the shredder of my food processor and bagged it in one cup amounts for the freezer. Zucchini is probably the only food you can sneak into a recipe and no one will notice...or maybe you will want them to notice. I use it a lot to cut down on oil.

This is a great idea. Really appreciate your posting it. There is a recipe out there somewhere for making dressing with zucchini and using crackers as a topping but have not located it. Make it one summer years ago but shortly after that had a house fire and that cookbook went with everything else.

I am definitely going to try this. It sounds yummy. I am a bit surprised that you have to cook the zucchini first. Would it just be too wet if you didn't do that?

I always freeze lots of zucchini. Some in pieces and some shredded. I love zucchini bread and it just disappears if you add it to spaghetti sauce or any other pasta recipes.
