I don't imagine too many members here raise their own Avocados, but I'm hoping that there are several who would be willing and able to share their favourite Guacamole Recipe. It would be most appreciated. Thanking You:)

My son-in-law is Mexican and I make it like he does - just smash the peeled avocados in a bowl, add chopped onion, chopped fresh cilantro, salt to taste. You can also use a little lime juice which adds to the flavor but also helps the guacamole not turn so dark. Thats it but its really good. Much better (I think) than how my parents always made it - with mayo in it.

Mine is a bit simple. Although JackiP, if we could easily get cilantro I'd so try yours.
2 mashed avocados, 2 cloves minced garlic, 2 sprinkles cayenne powder, 2 pinches red pepper flakes. Lime juice and salt to taste. Whenever we make it, my daughter will pass on the chips, take a small bowl for herself and just eat it with a spoon! :rolleyes:

I only wish I could grow avacados in missouri....I could live on them...
my mom started me eating them as sandwiches on white bread with salt and pepper...
but gucamole...OH MY....I am with the little girl mentioned above..andI will put it on anything hahahahah

Ooo, I saw an Avocado Salsa in a cookbook today that used the same ingredients as your son-in-laws recipe Jacki, with the exception that the avocado was chopped instead of mashed. But mashing them has to be easier than cubing..I mean they really don't have a cube-friendly texture after all :p
And garlice and a bit of red pepper sounds like an interesting addition. Thanks Orgarden.
I'll give them both a try. :)

Louanne, my friend Jeannine, who is a member here, but has been busy with her daughter's 4-H of late is originally from AZ. Man, she eats avocado on almost anything. I thought it was just for mashing and eating with chips, but like yourself, she eats it in sandwiches with sprouts, tomato and mayo.

I'm cracking up here! Yep! It don't get any better than an avacado anyway you wanna eat it! Actually, 4-H did keep me away quite a bit, but then I got hit pretty hard by some big bad puter nasties! 4 of the darn things to be exact, even though I have protection against such attacks, they made it in. Took my DH two weeks to clean all traces and get me back on here! So glad to be back!

YUMMO! another avocado lover here! :O)
someday i'm going to find a 'dwarf' avocado tree that produces fruit to grow inside up here in the north! till then, we depend on the stores.
i was wondering if anyone has found a way to preserve avocadoes? i have tried freezing with no luck. i was wondering if we made an avocado salsa, could it be canned? peace, bunkie.

In South America, they commonly mash or puree them and add sugar. They
feed this to their young children, etc.
I've never tried it myself, but after having seen a segment on "Good Eats" where Alton made avocado ice cream,it might be worth a try.

Hey LarryS;That is what Custard Apple tastes like.I have made Avocado ice cream and it's interesting but not spectacular.-

Thank you for a great thread. Now I have an idea of what to do with the two avacados laying on my kitchen counter. My sister bought them over a week ago and hasn't done anything with them. What can I use instead of cilantro for quacamole.

If you ever become tired of guac. (YEAH, RIGHT!), here's something different to try, and absolutely delicious too.
Avocado, Tomato and Mango Salsa
1 Mango - peeled, seeded and diced
1 Avocado - peeled, pitted and diced
4 medium Tomatoes, diced
1 Jalapeņo Pepper, seeded and minced
1/2 cup chopped fresh cilantro
3 cloves garlic, minced
1 tsp. salt
2 TBS fresh lime juice
1/4 chopped red onion (I use Vidallia onion)
3 TBS olive oil
Combine, gently stir and refrigerate for 30 minutes before serving.

A restaurant in Kansas City used to make sandwiches with a little cream cheese, avocado, sprouts, chopped walnuts. Absolutely sublime on whole wheat or other grain breads.

Okay-Move over!!!!!!
First I'll say that I am with Louanne(I'm liking you more and more every day) I'll take a Turkey sandwich on a croissant with sprouts,yarlseberg swiss, avacado(and a little salt on them) and mushrooms-with a little mayo and Yummo!!!!
Here's my Guacamole recipe:
Smoosh about 6 soft Avocados then add fresh lemon juice both to keep the dip from turning brown and for some zing. Add a little fresh minced garlic(don't over due-a little garlic goes a long way) Then add some of your favorite chuncky salsa(I say "your favorite" because this is to suit your taste) stir that all up. Thenn add some sour cream-for yes-creaminess. Then a smidge of season all to your taste. Then call me and I'll come over with the chips and I will meet you at the bottom of the bowl!:eek: :D
Someone else asked if you could freeze it---Yes you can freeze Avodado slices-put them into a bag-and add some lemon juice-not enough to really change the flavor, but enough to keep from turning brown. Also- squeez as much of the air from the bag as you can-if you have one of those food saver machines that will vacumepak it for you-even better. Good luck!
