Hi,
I am growing pickling cucumbers for the first time this year. I picked about 15 today, and my girlfriend and I found 2 very different recipes online for making pickles, without canning. We tried both, still not ready to eat yet, though.
Just wondering if anyone had a good basic non-canning pickle recipe.

Did you try any refrigerator pickle recipes? Or Asian pickle recipes?

FREEZER PICKLES
7 Cups sliced cukes
1 med. onion, sliced
1 T. salt................. Mix, let stand 3 or 4 hours in refrigerator. Do not drain or rinse. Pack in wide mouth pint jars.
Brine:
2 Cups sugar
1 Cup vinegar
1 t. celery seed
1 t. mustard seed.... heat only enough to dissolve sugar... cool, pour over cukes and onions in jars. Leave at least 1" headspace. Cap and freeze. Ready in 3 weeks.
REFRIGERATOR PICKLES
1 gallon sliced cukes
3 onions, sliced
Brine: Boil and pour over cukes.
4 C. vinegar
4 C. sugar
1 1/3 t. mustard seed
1/2 t. tumeric
1/2 C. salt
1 1/3 t. celery seed
garlic clove, optional
Store in refriterator... ready in 3 weeks.
You could use just about any pickle recipe to store in the refrigerator. I would probably pour the brine over them while hot to kill off any organisms that might cause spoilage. I'm thinking of those Clausen dills in the cold case of grocery stores. They use less vinegar because they are kept cold.

Keeping fermented foods from spoiling is a balancing act. You can do it with high salt (sugar preserves, also) or high vinegar... or a balance of vinear, salt or sugar, but to go below that the food has to be kept cold. I suspect they wanted a crispier pickle, also.

sounds like a good recipe, has anyone ever pickled zucchini?

I suspect most people in this part of the country have made zucchini relish... never made pickles from zucchini because I never lacked for cukes.

Justdoit does the 't' in the recipe stand for teaspoon or tablespoon. Would hate to get it wrong.

i also thought that the big T meant tablespoon and the little one meant teaspoon!:O)

That's what it means in all my OLD cookbooks. Maybe things have changed while I wasn't looking. ;O)

I've been reading this forum for a couple of weeks, but I'm new to this and wasn't sure how to jump in and ask questions. I was wondering if anyone has a recipe for crock pickles that don't need to be canned?:confused:
