hey all,
i have a bunch of chives. i mean alot, to the point where they are gettin outta hand. do i cut them back and dry them or not? and if the answer is to dry them, how do i go about doing that? thanks

Denbro,
You can just trim the plant back monthly to keep them from going to seed after which I find the stalks get somewhat chewy :( Or, you could dry some and freeze others to see which you actually prefer for use over the winter?
Do you own a microwave? Herbs are easy to dry in a microwave. Chop the chives in one inch lengths. Place on paper towel. Zap for one minute, and then 30 sec intervals until you feel they are dry.
To freeze, again trim them to one inch lengths, and put them on a cookie sheet to freeze. Once they are frozen, place them in small freezer containers/bags and you're ready for freshtasting chives in your winter soups and stews!
