View Full Version : Cucumber (Green) Relish Recipe Wanted

My husband loves that wretched green relish that the grocery stores sell.
I've tried for years to wean him away from that stuff and get him to eat a more adult style of relish such as the one I enjoy with hot peppers and cauliflower in it..But to no avail.

I tried a recipe I found online last summer, but it has too much liquid. I know, I can add more cukes to the bowl. But I thought I would ask here if anyone has a recipe that their family enjoys?

Here's a recipe, you might experiment by adding half the liquid to start and add more if it's to thick.
Cucumber Relish

4 1/2 cups cucumbers -- chopped
3 1/2 cups celery -- chopped
3 cups onion -- chopped
2 cups red bell pepper -- chopped
1/4 cup canning salt
4 cups water
4 cups vinegar
3 cups sugar
2 teaspoons mustard seed
2 teaspoons celery seed

Combine cucumbers, celery, onion and peppers in a large bowl; add salt and water. Cover and refrigerate overnight. Drain; rinse and drain again. Combine remaining ingredients in a large kettle; bring to a boil. Add vegetables; simmer for 10 minutes. Ladle hot mixture into hot jars, leaving 1/4" headspace. Adjust caps. Process for 10 minutes in a boiling water bath.
Yield: 10 half pints.

Its not a relish but one thing I like to do with cucumbers.

Mix about 50/50 vinegar and water I usually have more vinegar than water so its really up to taste. Slice up some onion and cucumbers and let it soak for 24 hours or so.

MMMMMM Boston, that's a family fave here-with lots of black pepper!! Sometimes I'm naughty and mix in some sour cream!!

Thanks Wilderness, that sounds just like what I was looking for. I'll do a test batch first and then if it passes the "food critic's" taste test, I'll quadruple it, at least..

Trudyjean, if you have time, yes please send me yours as well. I'll try it too. TY

Now cukes and vinegar...to die for..

Another simple dish is sliced tomatoes with a sprinkle of sugar and a dash or two of vinegar o'ertop...

Will summer ever get here? I can't wait...
