I sold Hummus at the farmer's market for the past 10 years and it did very well. I prefer to soak dry chick peas overnight and then pressure cook them, as the canned ones are undercooked. For 3 cups of cooked chick peas add 1/2 cup tahini (sesame butter), juice of 1 lemon, 1 teaspoon salt and garlic to taste - I like garlic and was generous. Run the whole thing in the food processor until you have a nice homogeneous mix. Serve topped with a bit of olive oil. This is the traditional way of making hummus.

Now if you want to improvise, you can add basil, cilantro, sun dried tomatoes, artichokes or whatever you fancy.

here is my favorite one to make and it is just a quicky
one can of chick peas drained and rinced
2 cloves garlic
1 or 2 dashes of hot sauce your choice
and 2 heaping tablespoons of tahini-or if your like my mom and don't care for sesame anything-- two heaping tablespoons of good crunchy peanut butter
a bit of salt and pepper if you like. whiz in food processor or blender till fine serve with pita chips or chips of your choice..
now-- you can add other stuff to this and make it your own.. like chopped green onion, or a big two tablespoons of pesto-- or a few finely chopped tomatoes or even blend in some nice ripe avocado when in season, and add a bit of lemon or lime juice.
hows that sound?? darn! its making me hungry too.!:D

My recipe is just like Emerald's recipe, with ONE exception:

Instead of hot sauce, I add the juice from 1/2-1 fresh lemon. It's up to how you like it.

Of course, we all really like a swirl of extra virgin olive oil on top.


I've never tried it with the hot sauce: next batch, watch out!

This is my world famous hummus recipe. I get requests for this whenever we have a potluck. It's incredibly easy oh so yummy.

1 can chickpeas, drained and rinsed
1 lemon
1 head garlic, roasted
sea salt to taste
a few dashes of cayenne pepper
High quality olive oil--I cannot stress enough how important it is to have really good olive oil
fresh parsley (optional)

Put the chickpeas in a food processor. Squeeze the juice from the lemon into the food processor. Turn the food processor on. Slowly drizzle in olive oil through the feed tube and process until the hummus is smooth, creamy, and the consistency you want. Stop processing. Add the roasted garlic, some sea salt, and cayenne pepper. Process to blend well. Taste and add more salt if necessary.

Put hummus in a bowl. Drizzle with more olive oil. Sprinkle chopped fresh parsley on top. Serve at room temperature. If you are making this in advance or if you don't eat it all at once and you want to save it, keep it in the fridge but bring it to room temperature before serving.

There's a triple batch of this in the conference room at work right now, waiting for a surprise baby shower we're having this afternoon.

I'm gonna shock everyone now, Heheh.
I take 2 slices of salami
Mustard
onion
pickle slivers
Fry them to remove as much fat as
possible and achieve a flavor I like.
I use the tear drop slots of me grater-
shredder and shred a bunch of onion.
Now, on whole wheat bakery bread
sliced thin, I lay a thick layer of onion.
a layer or shredded pickle.
I place the fried salami on this, then
yellow mustard, Heheh.
You'll find that slitting the salami on
two opposing edges that the slices
will not curl up.
Pure poison, but I love it. The onion
shredded like that is so hot it tases
almost like horse radish.
Quick, down and dirty
You'll still be hungry though! Hungry for another.

Another thing I like to add to hummus now and then is a very ripe avocado. Makes it green but yummy. It's a good specialty hummus now and then.

Just happen to have a Lebanese cookbook from the library out now:

HOUMMUS B'TAHINI

1 1/2 C chickpeas, soaked overnight
2 tsp salt
2 cloves garlic
1/4 C tahini
1/2 C lemon juice
pinch of cayenne pepper, 2 T chopped parsley

Drain chickpeas, place in a pot with 3 times their amount of water. Add 1 tsp salt and bring to boil. Boil vigorously for 10 minutes, turn down the heat, cover and simmer til tender, about 1 hour. Drain the liquid and reserve. Reserve 1/2 C whole, cooked chickpeas for garnish, if desired. Puree remainder of chickpeas by processing or pressing through sieve. Crush garlic with 1 tsp salt-blend into puree. Slowly beat in tahini and lemon juice alternately. Blend in reserve liquid til creamy but thick. Add salt and lemon to taste. Serve with a pinch of cayenne, parsley and reserved chickpeas.

After viewing 30 recipes online & YouTube and asking on other forums as well as here ... The rub seems to be the Tahini... :eek:

I can't buy it here in the area where I live. All five possible store locations had no idea what I was talking about. I dread the idea of having to buy it online , the shipping will cost more than the stuff ! My old house in Phoenix was right next to an arab market that had all of that stuff...

Man I am bummed out !


... and after reading all of those recipes , I'm really hungry !!!

Try making your own if you have access to sesame seeds. Slightly toast and grind in small food processor.

Roy that's what I was going to say... the tahini is the most important part space... maybe aside from chickpeas... It's not that uncommon. We can get it in any supermarket here although we like homemade the best.

Roygee's suggestion is a good one-- I live in an Armenian neighborhood so tahini is easy to get, but I often toast and grind the sesame seeds instead because I like the fresh toasted flavor in my hummus. Just lightly toast the seeds in a pan and grind them in the food processor for a minute before you add the rest of the hummus ingredients. It won't look as smooth as tahini paste, but when it's all blended together, it'll taste great.

I **gasp** don't ever put tahini in my hummus. I don't really care for tahini.

Peanut butter-- ya gotta try peanut butter instead of tahini-- me, I like them both!!:D
