Velveeta is not cheese! It's a cousin to SPAM, and part of the WTHITS? family.

I remember being the the A and P store ( remember those?) and asking the butcher why the cheese in his case was so much more expensive than the cheese in the yellow box. I think I was 8 years old. His answer was the same as Moonlily's "I'ts not cheese".
My mom had ridiculous ideas about food, and probably used Velveeta because to make cheese sauce you had to use fat to make a white sauce to melt cheese in. She always made gravy and sauces by mixing liquid and flour together, then cooking to thicken it. She always poopooed the notion of the "raw flour taste" and never added fat or sugar to her food when cooking (of course she did when baking, but probably left both fat and sugar out the one time she tried and failed to make yeast raised bread). Then she would turn around and eat a buttered graham cracker.

I used to order gourmet cheeses from a catalog before they became available in grocery stores. There was a delicious chocolate cheese I used to order every year. I haven't seen chocolate cheese in ages! Did you ever eat chocolate cheese?
