There is place in south texas on the gulf, they cook theirs like blackened catfish. Maybe you can find some blackened seasoning and a cast iron skillet.

Talapia is a great fish
I love it!! .. If I am buying fish out of the store I usually buy Talapia I like it just about any way it is cooked.. Let us know how you cooked it and how you liked it

If your talapia tastes like earth than it was not good fish(possible bad handling or bad growing, who knows how they are grown in China)- the only fish that I have ever had that tasted like dirt was catfish.
Also any fish that smells strongly fishy might not be that fresh either. I used to be in charge of the fish when it came in to the restaurant when I lived in Florida and had to take a course in buying and cooking fish. But some fish Does smell strongly and have a funky taste. I like mine when I buy it(I don't get it if it is from China) is put in a pouch of foil(en Papillote) with lemon and butter and just a bit of garlic and salt and pepper and then I put it on the grill. I have also stuffed it with crab/shrimp stuffing and baked it.. Served it with white wine butter sauce.(basically a Beurre blanche with wine sauce)

I had tilapia baked with vegetables in a parchement paper pouch with salt pepper and herbs. Since the filets are thin it is easy to overcook them and then it is just plain bad eating.

Aren't tilapia one of the kinds of fish people grow in tanks in permaculture-style systems with greenhouses?

I agree with Em. I only buy American raised Tilapia - Chinese is raised in who knows what conditions. It is so delicate that I cook it in indiviual foil packets, too. In addition to lemon,butter, and sea salt, I like to add match stick carrots and shallots with a touch of fresh ginger, to the packets.

The missus and I eat a lot of tilapia. Most of the time I just pan fry it with a little butter and oil, lots of pressed garlic and a little salt and they are delicious that way. Sometimes I'll season em with Goya Sason (mostly msg by the way, so avoid if you have a sensitivity).
