Can I freeze some of my tomatoes and then make a spaghetti sauce to can at another date. Having a time issue this week.

Yep, sure can. You don't even need to do anything much to the tomatoes--wash and remove the stems and put them into plastic bags. When you get ready to make sauce, run the tomatoes under water, or just let them thaw a little, and the skins will slip right off.

When we freeze whole tomatoes, we put them on cookie sheets. Then, after they are frozen, we put them into plastic bags. That way they aren't frozen together in one big blob.
Good advice on removing the stems. Didn't do that one time ... My wife and I also chunk the fresh tomatoes and process them through a food mill to get the seeds and skins off ... leaves us with tomato puree. We pour it in quart tubs and put them in the freezer and pull out what we need for stews, chili, etc. Maybe you don't have time for that, either.
